Instructions

Step 1

In the bowl of an electric mixer beat together butter and sugar on medium speed until light and fluffy, about 3 minutes.

Step 2

Add egg yolk and vanilla; beat well.

Step 3

Whisk together flour and salt, and add to mixture, beating on low until combined.

Step 4

Chill dough for at least 1 hour.

Step 5

Preheat oven to 350 degrees.

Step 6

Form dough into 1-inch balls.

Step 7

Place balls on parchment-lined baking sheet.

Step 8

Make a deep indentation in the center of each ball with your thumb. I use a cork, it the perfect for uniform circles. Take care not to press down too hard or the cookie will break apart.

Step 9

Using a piping bag, fill center of each cookie with lemon curd.

Step 10

Bake for 10-12 minutes.

Step 11

Remove from oven, and place on a wire rack to cool.
