Instructions

Step 1

Preheat oven to 400 degrees (convection works best).

Step 2

Peel and cut potatoes into 1 pieces.

Step 3

Toss to coat with 2 tablespoon of olive oil.

Step 4

Arrange in a single layer on two baking sheets

Step 5

Roast for 35 minutes

Step 6

Mix 2 tablespoons oil, pepper puree, vinegar, salt and pepper to make a dressing

Step 7

Combine cranberries, pecans, chives and cooked sweet potatoes in a medium bowl, drizzle with dressing, cover. Refrigerate until chilled.
