Instructions

Step 1

Preheat oven to 375F/190C. Melt together the butter, brown sugar and syrup in a small pot. Sugar doesn't need to dissolve.

Step 2

Mix until well combined. Leave to cool. In a large bowl, beat together coffee, yogurt and egg.

Step 3

Add cooled melted mixture and mix well. Sift together flour and baking powder in another bowl.

Step 4

Add choc chips and mix through.

Step 5

Add to liquids and fold in VERY GENTLY until flour is just wet. Fill 12 greased muffin cups with mixture and
