Instructions

Step 1

Preheat oven to 375F. Spray 8-inch-diameter cake pan with nonstick spray.

Step 2

Whisk flour, 4 tablespoons sugar, baking powder, salt, and baking soda in large bowl to blend.

Step 3

Add butter. Using fingertips, rub in until coarse meal forms. Make well in center of flour mixture.

Step 4

Add buttermilk. Gradually stir dry ingredients into milk to blend.

Step 5

Mix in raisins.Using floured hands, shape dough into ball.

Step 6

Transfer to prepared pan and flatten slightly (dough will not come to edges of pan). With a sharp knife, slice a shallow X across the top (optional).

Step 7

Sprinkle dough with remaining 1 tablespoon sugar.

Step 8

Bake bread until brown and tester inserted into center comes out clean, about 40 minutes. Cool bread in pan 10 minutes.

Step 9

Transfer to rack.

Step 10

Serve warm or at room temperature.
