Instructions

Step 1

Put potatoes in a casserole dish, cover and cook on high in microwave for 8 minutes until just barely tender. You don't want them too soft as you will continue to cook them in the skillet.

Step 2

Heat non-stick skillet over medium heat with oil, add onions and saute for 3-4 minutes until softened.

Step 3

Add garlic, mushrooms, and potatoes.

Step 4

Saute 3-4 minutes.Move potatoes and onions to the side of the skillet and add pork.

Step 5

Saute pork for 4-5 minutes.

Step 6

Add chicken broth, wine, thyme, parsley and salt and pepper to your taste.

Step 7

Saute 5-8 minutes until liquid is reduced by three quarters.
