Instructions

Step 1

Whisk eggs, egg whites, nonfat milk, salt and pepper in a large bowl, set aside.

Step 2

Add bell pepper and onion to large nonstick skillet pan with a little olive oil, and saute on high heat for a few minutes until softened.

Step 3

Turn down heat to medium; add egg mixture, tilting pan so the entire bottom is evenly covered.

Step 4

Cook for a few minutes.

Step 5

Pop entire pan under broiler. Broil 2 minutes, or until lightly browned.

Step 6

Arrange four bagel halves on a nonstick pan, cover with cheese. Broil until cheese is melted.

Cut omelet in half, put on two different bagel halves.

Top with a large handful of baby spinach and remaining halves.
