Instructions

Step 1

Heat olive oil in a medium sauce pan over medium high heat.

Step 2

Add onions and saute for about a minute or two until onions start to soften.

Step 3

Add garlic and saute another 30 seconds or so.

Step 4

Add smoked turkey pieces and saute for another minute.

Step 5

Add diced tomatoes, broth, salt and red pepper. Bring to a boil, and then reduce heat to medium low and simmer for about 15 minutes.

Step 6

Add beans and let everything cook for another 15 min.

Step 7

Add more broth or water if it's starting to get too thick.

Step 8

Add spinach and simmer another 5 min.Taste and adjust seasoning to your taste. Stir in parsley at the end.

Step 9

Garnish with a drizzle of good olive oil, a little chopped parley, freshly ground pepper and some good bread. Grate a little pecorino or parmigiano reggiano to serve if you like.
