Instructions

Step 1

Pre heat oven to 350 degrees F

Step 2

Cut tops off of each red pepper and clean out insides.

Step 3

Mix brown rice, corn, onions, black beans, salsa, cumin, salt, pepper, and 1/2 cup of the shredded cheddar.

Step 4

Mix well.Fill each bell pepper

Step 5

Using the last 1 cup of shredded cheddar sprinkling over tops of each bell pepper.In your baking pan pour about 1/4 inch of water or less

Place bell peppers in and bake for 30 minutes
