Instructions

Step 1

Preheat your oven to 375 degrees.Spray a cupcake pan lightly with non stick spray. Press a prosciutto slice into each cup with the the prosciutto slice coming over the top a little bit.

Step 2

Bake for 10-12 minutes until crisp.

Step 3

Remove from the pan and place onto a paper towel.Once cooled a bit and just before serving, fill each cup with baby arugula. Top with the diced tomato and fresh diced mozzarella.

Step 4

Drizzle with olive oil, a squeeze of lemon juice and some fresh cracked pepper.
